Translated as an Iron Goddess of Mercy, this is one of the most prized Oolong teas. It has a light and mellow buttery taste. The name comes from a legend telling of a poor farmer who used to pass a temple containing an iron statue of ‘Guanyin’ the Buddhist Bodhisattva of compassion, on his walk to the tea fields, and noticed that the temple’s condition was worsening daily. So he brought a broom for his home, swept the temple clean. he continued to return to keep the temple from again falling into disrepair. One night Guanyin appeared to him in a dream and told him of a cave containing a treasure. The farmer went to the cave and found a single tea shoot, which he took home, planted in his field, and nurtured into a bush that produced the finest tea around. He gave cuttings of his new plant to all his neighbours and told them that this exquisite tea was called ‘Tieguanyin’.

Brewing Instruction
400ml is ideal for 5g of loose leaf. Brewing involves experimenting to find your perfect taste. Use 100° boiling water and brew for 3-4 minutes. Avoid bitterness by not overbrewing. Add more leaves for a stronger cup.
