WHITE TEA

White Tea-a speciality of Fujian province in China, and is unique in that the fresh leaves undergo only two processes: withering and drying, and that the new buds are plucked before they open. The name comes from the delicate silvery white down or hairs that cover the leaves, and they give a very pale coloured tea.
